Follow the paper lanterns off Charlotte Street, past a CBD car park, and there it is: a colourful container kitchen, trestle tables, red-and-blue plastic stools, and festoon lights strung overhead for that South-East-Asian night-market glow.
"I saw this spot and thought — this is just like a Thai backyard," says founder Wiyada Korte. No white tablecloths, no fuss — just proper Thai street food where you least expect it, the kind of place you tell your friends about.
Wiyada Korte grew up in Thailand, waking at 6am to the smell of her mum's kitchen — a taste of home that never left her.
An education consultant by trade, she opened Ari in the Brisbane CBD in 2024, and saw how people lit up over the noodles. When a diner told her a bowl "made me feel like I'm eating at home," she knew a noodle shop was next. Say Hi opened in April — her mum's recipes, held to the taste she grew up with, served the way family does: generously, and with a smile.

Our signature boat noodles are the bowl Wiyada remembers most from back in Thailand — sellers pulling up by boat each morning, ladling it from a big pot, all dark broth and herbs. "When you eat it, you feel alive and warm."
